When I think about things I never thought I’d be excited about when I was 22, “meal prep” definitely comes to mind. Surprisingly, I find joy in it. Not because I’m a great cook – I’m still learning. But because I enjoy a project that keeps me home on a Sunday afternoon, allowing me to listen to my favorite podcasts and audiobooks, have some “me” time, and start the week with a few delicious meals and snacks that my kids actually enjoy. There’s something about the sense of accomplishment and organization that comes with meal prep. It’s like buying new workout clothes – it just makes you feel good. On a typical Sunday, I might roast a chicken for dinner and leftovers, make broth from the bones, prepare a big soup for my husband and me, chop veggies for salads, and whip up homemade salad dressings. However, today I’m sharing the three super easy and healthy snacks we make for the kids (and us) that they truly love.

Now, let’s get into it – these snacks are incredibly easy to make, require only one bowl each, and are packed with hidden healthy ingredients. We’re talking chocolate veggie muffins, no-bake energy bites, and turkey and veggie meatballs (gluten-free). While I didn’t come up with the recipes myself, I’ll link to the original creators to give them credit. But I did make some tweaks 🙂
Chocolate Veggie Muffins

I’m not much of a baker – too precise, too scientific, too easy to mess up. But these muffins are a breeze to make. Just throw all the ingredients into your blender, blend, and bake in muffin tins. We’ve made these countless times, and I’ve experimented with different veggies (spinach works great instead of kale, and protein powder can be added easily). Sometimes they come out more green (which my kids don’t like), so I adjust the cocoa powder to make them sweeter.
