Kids are now back in school, and the rainy weather has ushered in “soup and slow cooker season” earlier this year. I recently prepared a delicious slow cooker recipe for my team and wanted to share it here, along with another favorite from last year that we made repeatedly. Although my kids still prefer burritos, chicken nuggets, and burgers, they do enjoy these healthy slow cooker recipes.
One of my favorite recipes is Creamy White Chicken Chili, adapted from a recipe I found online. I made some modifications by omitting the half & half and using only cream cheese. While the original recipe called for chicken thighs, I found that using chicken breasts worked better. Of course, when serving this to kids, I hold off on adding cilantro and jalapeño, using them only as toppings for the adults.
Another favorite is Red Curry Lentil Soup, which I made multiple times last year. This tomato-based lentil curry soup is incredibly delicious and satisfying. The recipe is straightforward and can be easily adapted to suit your preferences.
